10″ or 12″ Dutch Oven

Cooking Oil

Corn Tortillas (preferably blue)

1 can black beans (more if desired or feeding a crowd)

Salsa or Picante

6 Large Eggs (more if desired or feeding a crowd)

8 Ounces Shredded Mexican Cheese Blend

Fry 10 corn tortillas (you may have some left over) in oil taking care not to crowd the pan.

Unless you plan to reuse oil carefully pour into fire or a hole.

Line bottom of DO with tortillas and cover with beans and Salsa or Picante.

Repeat in layers until all beans have been added.

Gently crack eggs over top and sprinkle with cheese blend.

Bake with coals on top only until eggs reach desired firmness (Lift lid every 10 minutes to check).
